Jicama Slaw with Orange Vinaigrette

1Lb Jicama

1 Small bunch Cilantro

¼ tsp Salt

¼ tsp Pepper

¼ cup White Wine Vinegar

Juice and Zest from 1 orange

1tsp Dijon Mustard

¾ cup Grape Seed Oil

Peal and grate Jicama into mixing bowl. In a separate small mixing bowl, mix together the orange zest and juice with vinegar and mustard; then slowly whisking in the grape seed oil. Taste for seasoning. Then toss with Jicama and top with cilantro
