1Btl 2006 August Cellars Riesling
1/2 Cup Sugar
1/2 Cup Water
1Btl Sparkling Wine
Rose water
Mint Leaf
In a medium sized sauce pan combine the sugar and water. Over medium heat bring your sugar and water mixture just to a boil. Once the Sugar has dissolved into the water remove from the heat and cool on wire rack until room temp. In a Pyrex casserole combine the Riesling with the sparkling wine. Add your cooled simple syrup to the wine. Place the mixture into the freezer stirring every half hour, until the granite is frozen and very flakey.
To serve: Place a scoop of granite into a martini glass. Sprinkle with rose water, and garnish with a spring of mint leaf.
